งานวิจัยนี้มีวัตถุประสงค์เพื่อวิเคราะห์โซ่คุณค่าและยกระดับประสิทธิภาพระบบโลจิสติกส์ กระบวนการผลิตผลไม้ท้องถิ่นแปรรูปภาคตะวันออก โดยขั้นตอนการวิจัยเริ่มจากการรวบรวมข้อมูลโซ่อุปทานผลไม้ท้องถิ่นแปรรูป จากห่วงโซ่อุปทานทั้ง 3 ระดับ ได้แก่ ระดับต้นน้ำ (เกษตรกร) ระดับกลางน้ำ (กลุ่มวิสาหกิจหรือผู้ประกอบการผลไม้แปรรูป และปลายน้ำ (ผู้บริโภค) แล้วนำข้อมูลมาวิเคราะห์ภาพรวมของการจัดการโซ่คุณค่า เพื่อให้ได้รูปแบบการจัดการโซ่คุณค่าที่เหมาะสม จากนั้นศึกษาสภาพปัจจุบันและวิเคราะห์กระบวนการผลิตผลไม้แปรรูป วิเคราะห์กิจกรรมด้านโลจิสติกส์ วิเคราะห์ความสูญเปล่าในกระบวนการผลิตโดยใช้แผนผังสายธารคุณค่า แล้ววางแผนการลดความสูญเปล่าในกระบวนการผลิต เพื่อเพิ่มประสิทธิภาพในกระบวนการผลิต จากผลการวิจัยพบว่า ผู้ผลิตในระดับต้นน้ำของโซ่อุปทานคือ เกษตรกรผู้ปลูกผลไม้สด ประกอบด้วย 2 ส่วน ได้แก่ ผลไม้สดที่ปลูกเพื่อเข้าสู่กระบวนการแปรรูปโดยตรงและผลไม้ที่ใช้การแปรรูปในการเพิ่มมูลค่า แล้วนำเข้าสู่โรงงานแปรรูปซึ่งเป็นระดับกลางน้ำในห่วงโซ่อุปทาน เมื่อวัตถุดิบเข้าสู่โรงงานแล้วจะมีกิจกรรมต่าง ๆ ในการแปรรูป โดยกิจกรรมเริ่มกระบวนการรับวัตถุดิบ ผ่านกระบวนการผลิต ไปจนถึงกระบวนการส่งมอบให้แก่ผู้บริโภคในระดับปลายน้ำของโซ่อุปทาน จากการวิเคราะห์ โซ่คุณค่า ทำให้ได้รูปแบบการจัดการโซ่คุณค่าที่เหมาะสม ซึ่งมีกิจกรรมที่สามารถเพิ่มคุณค่าได้ 4 กิจกรรม ได้แก่ โลจิสติกส์ขาเข้า การดำเนินงาน การตลาดและการจำหน่าย และการพัฒนาเทคโนโลยี และจากการวิเคราะห์กระบวนการผลิตผลไม้แปรรูปร่วมกับการวิเคราะห์สายธารคุณค่าพบว่ากระบวนการที่ไม่มีประสิทธิภาพในการผลิตเป็นกิจกรรมด้านการขนถ่ายวัสดุ เมื่อได้ปรับปรุงกิจกรรมการขนถ่ายวัสดุในกระบวนการผลิตดังกล่าวแล้ว สามารถเพิ่มประสิทธิภาพด้านเวลาได้ร้อยละ 7.02 และสามารถลดการเคลื่อนที่ในกระบวนการผลิตได้ร้อยละ 56.85 ดังนั้นในการบริหารจัดการด้านโลจิสติกส์นอกจากต้องให้ความสำคัญกับกิจกรรมหลักด้านโลจิสติกส์แล้ว จะต้องให้ความสำคัญกับกิจกรรมสนับสนุนด้านโลจิสติกส์ด้วย โดยเฉพาะกิจกรรมการขนถ่ายวัสดุภายในกระบวนการผลิต ต้องเลือกระบบขนถ่ายวัสดุให้เหมาะสมกับงาน รวมไปถึงออกแบบผังโรงงานและผังการขนถ่ายให้สอดคล้องกับกระบวนการผลิต ซึ่งจะสามารถเพิ่มประสิทธิภาพกระบวนการผลิตนำไปสู่การลดต้นทุนการผลิตได้

This research aimed to analyze value chain process and enhance the logistics performance system for local processed fruit in eastern, Thailand. The data collecting of local processed fruit supply chain were conducted from 3 levels: upstream (farmers), midstream (enterprises or fruit processing operators) and downstream (consumers) to analyze the overview of an appropriate value chain management model. The research was based on the analysis of the current conditions, the process of processed fruit, logistic activities, waste in the process by using value stream mapping and planning to reduce waste in the process in order to increase efficiency of logistics performance system. The research revealed that the upstream of supply chain were the farmer who produced fresh fruits, consisting of 2 parts, which were fresh fruits directly produced for processing and fruits that were used processing to increase value. Then they were imported into the processing factory which was the middle level of supply chain. When raw materials entered the factory, activities started to receive raw materials, production process, and delivery goods to consumers at the downstream level of the supply chain. The value chain analysis found that the appropriate value chain management model was obtained 4 activities that could add value including inbounded logistics, operations, marketing and sales, and technology development. Processing and value stream mapping analysis found that the inefficient activity process was a material handling activity. This activity has been improved. It could increase time efficiency by 7.02 % and reduce movement by 56.85 %. Therefore, the management of logistics, besides form focusing on the main logistics activities. Must pay attention to supporting logistics activities especially material handling activity, choose the right material handling system including design the factory layout and material handling layout. Which can increase the efficiency of the production process leading to the reduction of production costs.
